How to select best Mosambi?
Always try to select Mosambi that are heavy for their size as it would be more juicy. You may also scratch the surface gently using your fingernail to see if they smell citrusy and if its oils embed in the fingernails. If yes, then it’s ripe.
Overripe sweet limes are normally shrunken, and possess dry, spongy skin. Avoid premature sweet limes, that feel light for their size.
Choose a ripe thin-skinned yellow fruit without any discoloration, that’s smooth in texture.

Expert Notes:
As I mentioned earlier please do not refrigerate the juice and consume it as quickly as possible. Sweet lime juice is susceptible to oxidation and will turn bitter if exposed to air for a longer duration.
Selection of Mosambi is really important so try to select Mosambi that are heavy for their size. They naturally are greenish yellow in color, you may also try scratching the top using your fingernail to see if they smell citrusy.
If using blender / electric juicer, be mindful of discarding skin of mosambi because it may spoil your juice with bitterness. As a result, you will be left with no choice but to add unwanted sugar to the juice.
Adjust the sugar according to your preference. If most of the sweet limes you use, are ripe, you may not need to add more sugar to the juice.
Seasoning is not really necessary but I would recommend to add pinch of sea / black salt in to your sweet lime juice as it elevates the flavor of sweetness. You may optionally sprinkle chaat masala while serving.
