This ‘sweet corn salad’ is prepared by adding some veggies (e.g., onion, carrot, tomato, etc.). I too, used these vegetables, as well as spices and herbs, to give the salad bit of crunch and flavor. Don’t forget to add the lemon juice, which is vital.

How to pick good sweet Corn?

Examine the husk: It should be bright green and tightly wrapped around the corn.

Silk conveys a lot of information: Go for pale-colored, slightly sticky silk. Corn silk refers to the long, thread-like strands of plant material that form beneath the husk of a freshly harvested ear of corn. The better the silk, the better the corn.

Choose heavy corn: Always pick corn that is heavy for its size because moist corn feels heavier than it appears, and dry corn feels lighter than it appears.

Tassels: White, yellow or even light brown tassels indicate that the corn was picked lately and is as fresh as it can be.

How to get Corn kernels off the Cob – 2 simple steps?

Step 1: Remove one of the corn lines by inserting the end of a spoon between the corn lines on the cob. That’s it; you don’t need to use the spoon anymore because we’ve already eliminated one line and made room for the other lines to be pushed.

Step 2: Then, using your thumb, push the other corn line in the direction of the removed corn line. Repeat the procedure until all of the corn lines have been removed. You’ll see how easily the corn kernels come out of the cob.

How to make perfect Sweet Corn Salad?

Step 1: Using a knife, get the corn kernels off the cob. Take approximately 2 cups of corn kernels.

Step 2: In an instant pot or steamer, bring the corn kernels to a boil. Cook the corn kernels until tender (more water can be added if necessary).

Step 3: Let the boiled kernels cool down for a while. Strain all of the kernels nicely in a mixing bowl.

Step 4: Now it’s time to add a few more ingredients in the mixing bowl. 1/4 cup finely chopped onions, 1/2 cup tomatoes, 1/2 cup carrots, and 1 cup cucumber are all good additions. If necessary, add more vegetables (e.g., cooked beans or green peas).

Step 5: Mix well, then add 2-3 chopped green chilies.

Step 6: Now season with salt and black pepper to taste. You can also add chaat masala if you want.

Step 7: For sourness, add 1-2 teaspoon lemon juice. Please remember to include the lemon juice as it is one of the essential ingredients.

Step 8: Garnish with herbs such as parsley or coriander leaves. I like to garnish with my preferred coriander leaves. Other herbs, depending on availability, may also be used. You may optionally use grated coconut on top of this salad to give a nice crunch!

Storage Instruction

I sometimes wonder why salads are stored because they taste best when served shortly after assembling. Although I don’t recommend storing it for an extended period of time, leftovers can be refrigerated for 1-2 days but should be thoroughly mixed and tossed before serving.

Be mindful, not to overcook or undercook the corn. Allow the corn to cool at room temperature for about 10-15 minutes to allow steam to escape.
