Easy Sweet Corn Salad

Fruits, vegetables, and salads contain more water, which keeps us hydrated. It's critical to stay hydrated in the summer, therefore I propose a fresh and light 'sweet corn salad' as a side dish for your meal.

- 2 cups corn kernels
- ¼ cup onion
- ½ cup carrot
- ½ cup tomato
- 1 cup cucumber
- 2-3 green chilli roughly chopped
- grated coconut for garnishing
- fresh coriander leaves for garnishing
- Salt to taste
- black pepper powder
- 2 tsp lemon juice
Using a knife, get the corn kernels off the cob. Take approximately 2cups of corn kernels.
In an instant pot or steamer, bring the corn kernels to a boil. Cook the corn kernels until tender.
Let the boiled kernels cool down for a while. Strain all of the kernels nicely in a mixing bowl.
Now add a few more ingredients in the mixing bowl. 1/4 cup finely chopped onions, 1/2 cup tomatoes, 1/2 cup carrots, and 1 cup cucumber are all good additions.
Mix well, then add 2-3 chopped green chilies.
Now season with salt and black pepper to taste. You can also add chaat masala if you want.
For sourness, add 1-2 teaspoon lemon juice.
Garnish with herbs such as parsley or coriander leaves.
